the ultimate sweet treat
this is a great way to save a slightly too dry banana bread (not baked by me!) and give it new life
serves one, but easily scaled up
ingredients
15g butter, softened
15g caster sugar
15g roasted, salted almonds
5g flour
assembly
1 slice stale banana bread
1 tbsp flaked almonds
method
preheat the oven grill and place a wire rack at the top of your oven
beat together the butter (15g) and sugar (15g) in a small bowl
blitz the almonds (15g) to a fine powder (or substitute an even weight of almond flour plus a good pinch of salt)
add the ground almonds and flour (5g) to the bowl and beat together
spread the almond mixture generously across the top of the banana bread slice
sprinkle the flaked almonds (1 tbsp) over the top
transfer to a baking tray and grill for about 5 minutes, until the topping has set and the almonds are golden brown
let sit for 5 minutes before serving
