ingredients
113g butter
90g pumpkin puree
75g caster sugar
75g brown sugar
1 egg
1 tsp vanilla paste
130g plain flour
0.5 tsp baking powder
120g rolled oats
0.5 tsp cinnamon
1 tbsp brewers yeast
1 tbsp ground flaxseeds
80g walnuts, chopped
method
in a small saucepan, add the butter (113g) and cook over medium heat until butter is browned
remove from the heat, transfer to a bowl and let sit for a few minutes
add the pumpkin puree (90g), caster sugar (75g) and brown sugar (75g) and mix to combine
add the egg (1) and vanilla (1 tsp) and mix to combine
add the flour (130g), baking powder (0.5 tsp), rolled oats (120g), cinnamon (0.5 tsp), brewers yeast (1 tbsp), and flaxmeal (1 tbsp) and mix until just combined
add the chopped walnuts (80g) and mix through
cover and refrigerate at least 1 hour, up to overnight
preheat oven to 180°C
divide and roll into ~20g balls (1 tablespoon, for tiny cookies as pictured)
press a fork into the top of each cookie
bake for about 10-12 minutes
