welcome back to my new series: dehydration stations! this is part two: tom kha noodle soup
this is what i crave after a day of hiking - it’s spicy, sour, super creamy and full of green veggies and herbs
note i dehydrate all my veggies in advance, and mix and match them to make meals as required. the veggies listed below are easily swapped for the same weight of carrots, corn, capsicum, or any other vegetable you’ve managed to dehydrate!
i like it with chicken (a classic tom kha gai) but have a feeling this would be amazing with beef jerky too, or salami if you’re feeling super rogue

ingredients
at home
50g dry rice noodles
5g dried broccoli
2g dried mushrooms
2g dried kale
1g dried spring onion bits
big pinch dried coriander leaves
10g dried tom yum paste
big pinch of citric acid
45g coconut milk powder
on the trail
300mL boiling water
your choice of protein
method
at home
add everything but the coconut milk powder to an airtight container (e.g. a tupperware, mylar bag, or heat-safe ziploc bag)
store the coconut milk powder (45g) in a separate plastic bag, or a smaller ziploc within the bigger meal bag
on the trail
boil 300mL of water
add the boiling water to the bigger pouch of noodles and veggies and stir thoroughly, making sure to submerge the rice noodles as best you can
cover and let sit for 8 minutes (if it’s cold out, you can stuff the pouch inside your jacket to keep you and the noodles warm while you wait!)
add the coconut milk powder and stir through
