this is a silly treat made for a dear friend who loves frogs in the pond
i took the frogs out of the pond and took them for a day trip to the beach
inspiration, yields a party of five frogs
ingredients
sand base
80g wholemeal biscuits
about 25g butter, melted
pinch salt
lemon panna cotta filling
300g milk (or soy milk)
1 tsp vanilla paste
30g golden syrup
zest of one lemon
2 tsp gelatine powder
assembly
one packet (yield 500mL) blue jelly
5 mini (12g) freddo frogs
method
sand base
in a blender, food processer, or with a rolling bin, blitz the wholemeal biscuits (80g)
mix in about 25g of melted butter (you may need more or less to get the biscuit mixture to hold together)
pat the biscuit mixture firmly into the base of five glass jars or glasses
let chill while you prepare the panna cotta filling
panna cotta filling
add the milk (300mL), vanilla paste (1 tsp), golden syrup (30g), and lemon zest (from one lemon) to a saucepan
sprinkle over the gelatine powder (2 tsp) and let hydrate for 5-10 minutes
once hydrated, gently heat the mixture until the gelatine and golden syrup have fully dissolved
optional: strain to remove the lemon zest
let cool until lukewarm, but not set
pour the cooled panna cotta mixture evenly between the five jars
transfer to the fridge to cool and set (at least two hours)
assembly
prepare the blue jelly in a jug to packet instructions to make 500mL of jelly
let the jelly mixture cool in the jug until it is below the melting point of chocolate (about 25°C)
arrange the mini freddo frogs (5) in the jars
gently pour over the cooled jelly to submerge the frogs in the ocean water up to their necks
transfer to the fridge to cool and set (at least four hours)
serve chilled
