i love a cafe savoury muffin and this is my take on them, in loaf form (because i just moved and haven’t got a muffin tin!)
this loaf is packed with kale, parmesan, and black pepper and topped with crunchy sunflower seeds and pepitas
it’s just delightful warm and equally good cold from the fridge
yields 1 loaf
ingredients
2 eggs
70g extra virgin olive oil
120g milk
50g kefir (or buttermilk)
180g wholemeal self-raising flour
1 tsp salt
1 tsp fresh ground black pepper
140g parmesan, grated
2 cups kale, finely chopped
2 tbsp mixed seeds, to top
method
preheat the oven to 190C
line a loaf tin with baking paper
add the eggs (2), oil (70g), milk (120g), and kefir (50g) to a mixing bowl and whisk to combine
sift in the flour (180g), salt (1 tsp) and pepper (1 tsp)
fold until just combined
add the parmesan (140g) and kale (2 cups) and mix through
pour the batter into the prepared loaf tin
smooth the top and sprinkle over the mixed seeds (i used sunflower seeds and pepitas)
bake for 30-45 minutes, until it is golden brown, smells delicious, and a skewer in stuck into the middle comes out clean
let cool slightly then serve in thick slices, possibly with a little warm butter and more black pepper
