i am still in my granita phase, and pushing the bounds of what can honestly be considered granita
perhaps this is frozen yoghurt, granita-style
it’s delicious nonetheless
serves two
ingredients
1.5 small fresh mangoes (see here for recommended varieties)
160g greek yoghurt
1 tsp lemon juice
about 10g sugar, to taste
pinch salt
optional: 0.5 tsp ground cardamom
method
dice the mangoes and add to a food processor
blend until smooth
add the greek yoghurt (160g) and blend again until combined
add the lemon juice (1 tsp) and mix together
taste for balance - you may want to add a little sugar (i used 10g, to taste), a pinch of salt, and ground cardamom (0.5 tsp, if using)
transfer to a wide tupperware container and place in the freezer
every half an hour, remove the granita from the freezer and break up the slush with a fork
cover and return to the freezer to chill further
repeat for about 2.5-3hr until all the liquid has frozen and the granita is thick and fluffy
spoon into chilled bowls and eat immediately
