the best use for leftover egg yolks - make oatnog! (aka eggnog but with oatmilk)
this is best prepared the night before and left to chill overnight
serve chilled, or warm with a shot of coffee for a dirty oatnog
serves four
ingredients
750mL oat milk
1 tsp vanilla essence
0.25 tsp ground nutmeg
pinch salt
3 egg yolks (leftover from making pavlova for four people, conveniently)
40g caster sugar
method
gently warm the oat milk (750mL) in a medium saucepan over medium-low heat
add the vanilla (1 tsp), nutmeg (0.25 tsp), and a good pinch of salt and whisk to combine
in a separate bowl, whisk together the egg yolks (3) and sugar (40g)
once the oat milk is just steaming, add a spoonful of the hot oat milk to the egg mixture and immediately whisk the mixture to combine
continue adding the hot oatmilk and whisking the yolks together until you have added 4 spoonfuls of the oatmilk to the egg yolk mixture and it is well combined
transfer the egg mixture back to the saucepan with the remaining oatmilk
whisk thoroughly to combine
cook over medium heat until slightly thickened, about 5 minutes
cover and transfer to the fridge to cool completely
serve chilled, or gently warmed with a shot of coffee (or rum if it’s that kind of morning in your house!)
