plum bakewell cake
a birthday cake for sam
fresh red plums + lots of almond essence give this cake all the flavour of a bakewell tart
it’s excellent at 6:30am after an ocean swim, or at morning tea, lunch dessert, afternoon tea, or dinner dessert
bake it for a birthday cake, or bake it for yourself and carve off a slice whenever you feel like it - it’ll keep well in an airtight container for days

ingredients

200g caster sugar
110g neutral oil
3 eggs
1 tsp almond essence
225g yoghurt
0.5 tsp salt
200g self-raising flour
4 fresh ripe red plums
method
cake
preheat the oven to 170°C
lightly oil a round cake tin
add the caster sugar (200g), oil (110g), eggs (3), almond essence (1 tsp) and yoghurt (225g) to a bowl and whisk to combine
sift together the salt (0.5 tsp) and flour (200g) in a separate bowl
add the dry ingredients into the yoghurt mixture and stir until just combined
roughly chop the plums (4), then add to the batter and lightly stir through
pour the batter into the prepared cake tin
bake for 50-60 minutes or until a cake tester comes out cleanly
let cool completely before slicing
serve with big dollops of cream
