strawberries! what else to say
i brought this in for a work morning tea at my new job and it disappeared before i could even sneak a slice - so i think it’s good!
serves many hungry coworkers
ingredients
170g butter, softened
125g caster sugar
3 eggs
0.5 tsp almond extract
180g roasted almonds (unsalted)
80g plain flour
80g greek yoghurt
250g (one punnet) fresh strawberries, quartered
method
preheat oven to 170°C
cream together the butter (170g) and sugar (125g), then beat in the 3 eggs and almond essence (0.5 tsp)
blitz the roasted almonds (180g) in a food processor until they break into fine crumbs (but stop before you make almond butter!)
(you might also add more almonds than you need, remove the 180g once it’s done, and keep blitzing to make almond butter, which is excellent with a little spoon of honey and a generous pinch of salt mixed in)
add the roasted almond meal to the butter egg mixture and mix together
sift in the flour (80g) and mix until just combined
fold in the yoghurt (80g)
pour into a cake tin and smooth the top
top with the quartered strawberries (250g), making sure to press them into the cake batter
bake for about 45 min
let cool completely in the tin before serving
