rooibos, orange & almond loaf
a very good reason to put the kettle on
this is a simple little tea cake, perfect for when friends or family come to visit
rooibos is also called red bush or red tea and it’s caffeine free, earthy, and gently sweet
it makes the kitchen smell properly cosy
serves 12-16
ingredients
cake
200g caster sugar
4 rooibos teabags
zest of one orange
120g neutral oil
3 eggs
1 tsp vanilla paste
200g yoghurt
2 tsp baking powder
0.5 tsp salt
200g plain flour
70g slivered almonds
method
cake
preheat the oven to 170°C
oil a bundt tin
add the caster sugar (200g), rooibos (from 4 teabags, emptied into your bowl), and orange zest (from one orange) to a large bowl and rub together with your fingertips to infuse the sugar
add the oil (120g), eggs (3), vanilla paste (1 tsp) and yoghurt (200g) and whisk to combine
sift together the baking powder (2 tsp), salt (0.5 tsp), and flour (200g) in a separate bowl
add the dry ingredients into the yoghurt mixture and stir until just combined
add the almonds (70g) and gently mix through
pour into the prepared bundt tin
bake for 25-35 minutes or until a cake tester comes out cleanly
best eaten slightly warm
