ingredients
105g butter, softened
115g dark brown sugar
1 tsp vanilla paste
1 egg
95g plain flour
1/2 tsp baking soda
60g rolled oats
mix ins:
45g dates, chopped (or substitute your raisins, currants, or dried apricots)
45g dried figs, chopped
10g pepitas
8g sunflower seeds
15g desiccated coconut
25g cashews (or almonds, I used a mix), chopped
20g dark chocolate, chopped
method
cream together the butter (105g) and dark brown sugar (115g)
add the egg (1) and vanilla (1 tsp) and mix to combine
add the flour (95g), baking soda (0.5 tsp), rolled oats (60g) and mix-ins and mix until just combined
cover and refrigerate at least 1 hour, up to overnight
preheat oven to 180°C
divide into balls and bake for about 12 minutes
