i have a terrible habit of getting really excited by a new ingredient, using 90% of it, then leaving the final 10% to languish in my pantry until my next spring clean
this week’s obsession was masa harina - we’ve had homemade corn tortillas, cheese-stuffed arepas, cornbread-topped chilli, and dulce de leche empanadas
i made these these little lime & corn cuties to finish off the packet, but they ended up being my favourite of the week!
i’d rebuy the entire kilo to make these again
yields twelve cookies
ingredients
60g caster sugar
zest and juice of one lime
0.5 tsp vanilla extract
50g neutral oil
80g plain flour
70g masa harina
0.5 tsp baking powder
1 tsp egg replacer
method
add the caster sugar (60g) and lime zest to a medium bowl
rub the zest into the sugar with your fingertips
pour in the vanilla extract (0.5 tsp), oil (50g), and the juice from the lime and mix together to combine
sift in the flour (80g), masa harina (70g), baking powder (0.5 tsp), and egg replacer (1 tsp) and mix until just combined
transfer to the fridge to chill for 30 minutes
preheat the oven to 180C
roll into twelve even cookies and spread evenly apart on lined baking trays
using a fork, lightly flatten the cookies
bake for 12-15 minutes until golden
