yes, you read that right — i wrote a cookbook and no, it’s not my usual baking experiments or hiking-meal series (though those definitely helped me get into the zone)
this cookbook was created for the team at devoted grandma, and I wrote every single recipe. the recipes are simple, easily accessible for home bakers. there’s ♡ symbols next to steps where kids can help out
this speculoodle recipe (that’s speculaas x snickerdoodle) is a bonus recipe, in the style of those in the cookbook
these are cinnamon spiced butter cookies rolled in cinnamon sugar with streaks of biscoff spread through them
they’re indulgent and gooey with a crisp lacey edge and i loved them
Biscoff Snickerdoodle
A twist on the classic with caramelized Biscoff swirl and a little whole wheat goodness
Yields eighteen cookies
Takes 15 minutes active time | 14 minutes baking time
Ingredients
1 stick butter, softened
½ cup brown sugar
¼ cup white sugar
1 egg
1 tsp vanilla extract
1 cup whole wheat flour
½ tsp salt
½ tsp baking soda
¼ tsp cream of tartar
1 tsp ground cinnamon
1/3 cup biscoff spread
Extra cinnamon (1 tsp) and sugar (2 tbsp) for rolling
Method
Preheat the oven to 350°F
Line four baking trays with baking paper
In a large mixing bowl, cream the butter, brown sugar and white sugar together until light and fluffy
Beat in the egg and vanilla extract until smooth ♡
In a separate bowl, whisk together the flour, baking soda, salt, cream of tartar and cinnamon ♡
Gently fold the dry ingredients into the butter mixture until a soft dough forms ♡
Swirl in the biscoff spread with a spoon — do not overmix; streaks are perfect ♡
Chill the dough for 30-60 minutes
Roll the dough into 1-inch balls and coat lightly in the extra cinnamon and sugar mixture ♡
Place on the prepared trays, spaced 2 inches apart
Bake for 12–14 minutes, until the edges are lightly golden and the centers remain soft
Cool completely on a wire rack before serving
